The One With Gluten-Free Beignets //

As a gluten-free person, sometimes, you just accept that there are certain things in life that you'll just never have-- a Big Mac, cookie n' cream ice cream, Cinnabons... and for me, beignets. I've never had one, I love New Orleans and I kick myself for not eating one when I was there pre-gluten-free-life. But one day, all that changed.... 

I forgot to mention in my previous post that the night we traveled the world in Epcot, we headed to Animal Kingdom Lodge to eat at Sanaa. Y'all...this was one of the BEST meals I've ever had. We got naan (B's personal fave food) and they have GLUTEN-FREE VEGAN naan. I've never had naan so it was awesome to be able to try new food. They brought out 9 different dipping sauces for us to try and it was AMAZING. Seriously, one was better than the next. It filled us up so much that I barely had any room for my entree. 

For our entree, we each got a bowl of rice and a choice of two different Indian dishes-- with so many vegan options! It was so delicious, I'm just sorry that I didn't have enough room to finish it all! Afterwards, we headed outside to look at the animals sleeping-- they usually give you night vision goggles to watch the sleeping animals... we just missed it though! But we did get to see an ostrich and wildebeest. There was a bonfire, music and s'mores. I would love to stay at the Animal Kingdom Lodge one day! 

The next morning, we took a bus to Disney Springs and then took a boat to Port Orleans River Side to meet up with my cousins and get some gluten-free beignets for breakfast. It was about a 20 minute boat ride and it was simply beautiful. But let's get down to business....these beignets were AMAZING. I could have eaten all 6 by myself...but Brandon didn't mind helping. 

I'm not ashamed to admit that we went BACK to Raglan Road for more Irish food before heading out for the airport. It was amazing. 

It was so tough saying goodbye, but it was honestly one of the best trips I have ever been on. I had the time of my life and there was seriously no better way imaginable to celebrate all that hard work through college. I think the fact that they totally shocked me made it all the more magical! Ugh...
