What A Lazy Vegan Eats // Vol. 3 BREAKFAST

This has been a much requested edition of What a Lazy Vegan Eats-- it's all about breakfast this time! I normally don't eat a huge breakfast because it's my least favorite meal of the day, but I also know that it's the most important. I have definitely been getting more into breakfast lately and I wanted to share my favorite recipes with you guys to give you some inspiration! Even if you aren't vegan, these breakfasts are healthy, cheap and delicious!

Monday: Egg Sandwich

Today, I'm enjoying my favorite breakfast lately-- an egg sandwich! Instead of real eggs, I use
1/2 block of firm tofu, a sprinkle of salt, pepper, tumeric, onion powder and garlic powder, 2 TBSP nutritional yeast and a splash of almond milk. I crumble the tofu into a skillet, add the seasoning and a splash of almond milk. I cook on medium heat until it's all warmed up and the milk has been absorbed. I love to top mine with fresh avocado and BBQ sauce.

I know most people probably don't own Nutritional Yeast, but it's cheap to get off Amazon.com or at Whole Foods or Mom's Organic Market. It's a great way to get a cheesy, nutty flavor with a TON of healthy B12 vitamins and no dairy.

Tuesday: Chocolate Covered Berry Smoothie

Today, I'm in a bit of a rush, so I'm heading out the door with a smoothie in hand! To make this, I used 1 frozen banana, 1 cup of frozen mixed berries, 1 cup of almond milk and 1 scoop of ! Vega Protein & Greens, Chocolate. I am not kidding when I tell you that it tastes exactly like a chocolate covered strawberry! I top it with some fresh berries and it keeps me full for quite a while

Wednesday: French Toast

YUM. I'm not going to lie-- I sometimes eat this for dinner. I use a few pieces of bread and I whisk together 1 cup of almond milk, 1 TBSP ground flax seed, a dash of vanilla and  a sprinkle of cinnamon. Then, I make it just like regular french toast. 

Thursday: Blueberry Muffins

Today, I'm grabbing a few of these muffins to go for breakfast. They're made with oats instead of flour, almond milk instead of regular milk and applesauce to hold them together instead of an egg. Equally delicious though! 

Friday: Peanut Butter Rice Cakes

I woke up feeling not very hungry today so I opted for a lighter but still filling breakfast of a few rice cakes with some peanut butter on top. I often like to top them with strawberries or bananas, depending on what I have on hand. Rice cakes make a super quick, easy and healthy option for breakfast- and you can top them with peanut butter or avocado, too!
