How to Sneak In More Fruits & Veggies Into Your Diet

I get a lot of questions about how I'm always finding new ways to use fruits and veggies. If you follow me on Instagram, you know that I love transforming fruits and veggies into the star of the show on my plate. Loving fruits and veggies has taken some getting used to, but if you aren't a fan of veggies (or you just have trouble eating enough of them), here's 5 ways to make sure you're getting those daily servings! 

Add your veggies into sauces

Throwing veggies into your sauces is a great way to sneak them into your diet. When I make spaghetti, I often throw whatever veggies I have lying around into the sauce. Whether it's corn, peas, broccoli or carrots, the taste of the spaghetti sauce hides the taste of the veggies. I also talk often about my sweet potato mac and cheese. It's a great way to sneak in satisfying veggies like potatoes and carrots. You can even use squash if you wish! Check out my recipe for Sweet Potato Mac and Cheese HERE

Bake with fruits and veggies 

Baking is another great way to sneak in those fruits and veggies. Minimalist Baker has an amazing recipe for Healthy Carrot Muffins, which you can check out HERE. 

I love cooking with applesauce instead of oil because it sneaks in a serving of fruit and reducing the amount of fat. Zucchini, carrots, pumpkin, butternut squash, apples and berries are all great fruits and veggies to baked into muffins, cakes and cupcakes. 

Use veggies as meat substitutes 

Some veggies, like eggplant and cauliflower, as surprisingly good meat substitutes. If you're looking for a new recipe for Meatless Monday, but also want to make sure you get your fair share of veggies in, try subbing meat for veggies! We love using cauliflower instead of chicken wings. We follow THIS recipe from Hot For Food Blog and they come out so crispy every single time. I really don't like the taste of eggplant, but we love using it to make meatballs...who would have guessed right?! Add fruits into your desserts 

This one is the BEST. It's so simple and so easy. We make healthy banana ice cream all the time around here. All you need to do is freeze a bunch of peeled bananas in some tupperware once they get a little brown and spotty (that's when they're the most nutritious!) Then, place 2-3 bananas in a blender with a little bit of coconut milk. Blend until creamy and smooth. I also like to add vanilla, raw cacao powder or Mejool dates for extra sweetness. There are so many ways to enjoy this ice cream dessert with ZERO guilt and multiple servings of fruit. Win win!
